Beef Stew Recipe

Ingredients
  • 6 oz (=170 grams) organic grass-fed beef steak, cut cubes
  • 3-6 fresh, organic garlic cloves, chopped
  • 3 fresh, organic carrots, diced
  • 2 organic diced golden beets
  • 1 cup fresh, organic onion, chopped
  • 1 to 1.5 cups organic beef broth
  • 1 fresh, organic tomato, chopped
  • 2-3 fresh, organic bok-choy, cut half
Directions
  • Sauté onion over oil on a large pan, till brown
  • Add beef and cook for 5 minutes
  • Add carrots, tomatoes, golden beets, red wine, oregano and basil. Cook about 1 hour
  • Add cut bok choy at the last 10 minutes of cooking or till it gets soft
  • Serve with ¼ cup quinoa
