Ingredients
- 2 chicken breasts
- 2 tbs olive oil
- 3 garlic cloves
- 2 tsb curry powder
- 4 shallots, sliced
- 1 chopped carrot
- 1 chopped broccoli
- 2 chopped tomatoes
- 2 cups coconut milk
- Chopped hot pepper
- ½ cup of water
- 2 tsp ground turmeric
Preparation
- Heat the olive oil in a pan. Sauté the garlic, shallots 2 to 3 minutes over medium heat. Add the water (if needed add ¼ cup of water), turmeric and curry powder and stir.
- Add all other ingredients and mix well. Let simmer slowly for approximately 20 minutes.
- Spoon it over some basmati rice, or quinoa.
